Maria’s Mouth-Watering Vegan Muffins!

I am very excited to share with you this absolutely scrumptious muffin recipe! My goodness, they are so good on their own and with almond butter as well that you will definitely want seconds…ok…ok…thirds and fourths! hahaha.

These are also great muffins to share with non-Vegan family and friends so when they taste how good they are, you can give them the news that they are 100% Vegan and oil free! And watch their reaction…. 😉

I try to experiment recipes with the least ingredients possible since I like simple and easy recipes for everyone to try.

Shall we start? 😀

The following recipe makes 12 jumbo muffins. You can cut the recipe in half if you have smaller muffin tins or you want to make less.

PROCEDURE

Start by pre-heating your oven at 350 degrees F (approx. 190 degrees C).

Then, you need to start mixing the dry ingredients:

4 cups flour

2 tablespoons of baking powder

1 teaspoon of salt

Mix everything until is well combined. Set aside.

Now it is time to work with the other ingredients.

8 super mashed ripe bananas

1 cup of almond or soy milk

1 cup of brown or coconut sugar (optional if your bananas are very ripe)

1/3 cup of raisins (or more if you want)

1/3 cup of shaved almonds (or more if you want).

1/3 cups of chopped peanuts or walnuts.

In a large bowl, add the mashed bananas, almond/soy milk and sugar (optional). Then, carefully add this to your dry ingredients. Make sure to fold in the mixture and not overwork it.

When everything has been incorporated, add the raisins, almonds and chopped peanuts and carefully mix without stirring too much.

Top each muffin with some leftover chopped nuts or almonds and bake for 25 minutes.

Depending on your molds, these muffins might take less or more time. So start watching them after 20 minutes. They should look light brown on the outside and when pierced with a toothpick in the middle, it should come out clean.
